COTSWOLDS DISTILLERY SIGNATURE SINGLE MALT WHISKY

The production protocols follow a 92-hour fermentation, with high cut points on the spirit still to get a lighter, fruity spirit. After distillation the result is a light, colourless, new make spirit which is diluted and put into casks to mature for just over three years. This whisky is then aged at our distillery in the Cotswolds.

NOSE:

Notes of honey & butterscotch layered with light stone fruits & a hint of marzipan.

 

PALATE:

Strong notes of tannin-rich malt, oils and dark sugar with lots of spice, caramelised Seville orange marmalade.

 

FINISH:

Long and resinous, with dark red fruits and a hint of treacle.

Our award-winning Cotswolds Signature Single Malt Whisky is the first whisky ever to be distilled in the Cotswolds and the one which remains at the heart of our DNA since launching in 2017.

 

Our Signature Single Malt Whisky is crafted using the finest locally grown, traditionally floor-malted Cotswold barley. Matured in highly active STR (Shaved, Toasted and Re-charred) ex-red wine casks and premium first-fill ex-bourbon casks, this single malt whisky provides an incredible depth of rich and bold flavour.

COCKTAIL SUGGESTIONS

Cotswolds Distillery Signature Single Malt cocktails

Old Fashioned

Ingredients

60ml Cotswolds Signature Single Malt Whisky

10ml maple syrup
2 x dashes aromatic bitters

Method

Dissolve the whisky and maple syrup in a cocktail jar or glass. Add ice and stir continuously for dilution. Add the bitters, more ice and stir a few more times. Strain into an ice-filled rocks glass and express orange peel around the glass. Garnish with the orange peel and serve.

Whisky Sour

Ingredients

60ml Cotswolds Signature Single Malt Whisky

25ml fresh lemon juice

20ml sugar syrup

2 dashes of Angostura Bitters

½ egg white

Method

Dry shake all of the ingredients, add ice to shaker, shake, fine-strain and serve into a chilled old fashioned glass. Garnish with a lemon wheel and a cherry.

Manhattan

Ingredients

60ml Cotswolds Signature Single Malt Whisky

30ml Cotswolds Vermouth

1 x dash of aromatic bitters

Method

Place all of the ingredients into an ice-filled cocktail jar, stir and strain into a chilled coupe glass. Garnish with a maraschino cherry.
